What is kombucha?

Kombucha is a fizzy, fermented, sweetened tea made through a double fermentation process. This involves mixing a SCOBY (a pancake-shaped symbiotic culture of bacteria and yeast) with sweetened tea, with the bacteria and yeast converting the sugar into ethanol and acetic acid. The latter is what creates kombucha’s distinctive sour taste.

Why should I drink kombucha?

Kombucha can contain probiotics, antioxidants and vitamins, each of which provides certain health benefits. Probiotics can balance out the amount of bacteria in the gut and improve digestion, antioxidants help fight the oxidative damage caused by free radicals, while vitamins can support the immune system.
